Units are listed with each ingredient. 1 tbsp = 15 ml; 1 tsp = 5 ml. US cup measures are approximately 240 ml. Chef adaptations may retain source units. Scaling changes quantities, not cooking times. Ingredient ticks reset when the page reloads.

Let’s make it.

  1. Soak the glutinous rice in plenty of water for at least four hours, then drain. This soaking time is additional to the displayed prep time.
  2. Steam in a lined steamer over simmering water until fully tender, about 25–30 minutes; check water does not boil dry.
  3. Warm coconut milk, sugar and salt. Fold three-quarters into the hot rice and let it absorb for 10 minutes.
  4. Serve small portions with sliced mango and the remaining warm coconut sauce.

A little kitchen note

Use glutinous rice rather than jasmine rice; they behave differently. Cool and refrigerate leftover rice promptly.
