Units are listed with each ingredient. 1 tbsp = 15 ml; 1 tsp = 5 ml. US cup measures are approximately 240 ml. Chef adaptations may retain source units. Scaling changes quantities, not cooking times. Ingredient ticks reset when the page reloads.

Let’s make it.

  1. Beat eggs with half the salt. Heat half the oil and scramble the eggs until set; transfer to a clean plate.
  2. Heat the remaining oil. Add tomatoes, sugar, remaining salt and water. Cook until the tomatoes soften and release juice.
  3. Return the eggs and gently fold together. Heat until the egg mixture reaches 71°C / 160°F.
  4. Serve straight away over hot rice, adding a little water if the sauce is too thick.

A little kitchen note

Ripe tomatoes make a sweeter sauce. This is a simple adaptation, not a claim to one definitive regional version.
