Units are listed with each ingredient. 1 tbsp = 15 ml; 1 tsp = 5 ml. US cup measures are approximately 240 ml. Chef adaptations may retain source units. Scaling changes quantities, not cooking times. Ingredient ticks reset when the page reloads.

Let’s make it.

  1. Salt 600 g beef and refrigerate four hours. Grind remaining beef through a 3 mm plate and chill.
  2. Combine both portions; grind through an 8 mm plate, aligning strands on food wrap. Form a tight 12 cm log; chill two hours.
  3. Cut 2 cm patties; remove all wrapping. Oil and cook in a hot pan, turning every 15–20 seconds. For this safety adaptation, reach 71°C internally. Melt cheese on top.
  4. Mix ketchup, mayonnaise and mustard. Serve burgers in toasted buns with sliced vegetables, pickles and sauce.
