Units are listed with each ingredient. 1 tbsp = 15 ml; 1 tsp = 5 ml. US cup measures are approximately 240 ml. Chef adaptations may retain source units. Scaling changes quantities, not cooking times. Ingredient ticks reset when the page reloads.

Let’s make it.

  1. Rub beef with garlic, leaves from five thyme sprigs and oil. Optional: cover and refrigerate for one to two days.
  2. Heat oven to 190°C, or 170°C fan. Sear beef thoroughly, then transfer to a roasting pan with garlic and remaining thyme.
  3. Roast until cooked to your preference; our adaptation uses at least 63°C internally followed by resting at least three minutes. Rest loosely covered for 20 minutes.
  4. Soften onions in roasting juices about 20 minutes. Stir in flour, whisk in wine and reduce by half; add stock and simmer roughly eight minutes. Slice beef and serve with gravy.
