Units are listed with each ingredient. 1 tbsp = 15 ml; 1 tsp = 5 ml. US cup measures are approximately 240 ml. Chef adaptations may retain source units. Scaling changes quantities, not cooking times. Ingredient ticks reset when the page reloads.

Let’s make it.

  1. Soften onion and garlic in oil for five minutes; briefly toast pine nuts, wilt spinach and fold in feta. Cool the stuffing.
  2. Season opened lamb with sumac, spread filling centrally, roll and tie. Refrigerate at least 30 minutes.
  3. Brown the joint in a roasting pan for ten minutes, then roast at 190°C about 45–55 minutes. Our safety adaptation cooks stuffed centre to 74°C; rest.
  4. Combine cucumber, yoghurt, mint, molasses, citrus and seasoning; serve alongside sliced lamb.
